September is here, but you can still enjoy the end of the season with healthy and simple meals. Discover 4 summer recipes served with Costa Verde’s porcelain and share the good holidays’ memories on a table, full of flavour and colour.
Nutritionist Lia Faria (@liafarianutritionista) suggests including, in this very important meal, food items low in sugar, salt and saturated fat, and rich in vitamins, minerals, fibre and antioxidants.
Try these two breakfast options and take 10 minutes out of your day to sit down and enjoy this meal, which will make all the difference in your day!
Salads are part of our summer recipes’ list, which bring more freshness and colour to the table. One lunchtime suggestion is this summer salad by Catarina Silva, who runs Pitada Aqui e Acolá’s page (@pitadaaquieacola).
It’s very simple: grill 2 nectarines in a frying pan, cut 1 beef heart tomato into thin slices (is there a summer-like tomato just like this?), add 1 buffalo’s burrata and season it with an aromatic pesto sauce, basil leaves and some pine nuts. Quick, wasn’t it? So, take the time you didn’t need to prepare this meal, to savour it leisurely.

To finish off lunch, treat yourself to a low-guilt sweet, made one day before, shared by Fábio Rebelo (@fabiorebelo_7).
Heat 7dl of milk with 2 cinnamon sticks and a lemon peel and let it boil – always on the minimum.
While the milk is boiling, beat 8 eggs with liquid sweetener to taste (suggestion: vanilla flavouring). As soon as the milk comes to the boil, remove it from the cooker, discard the lemon rind and cinnamon sticks and add the mixture to the eggs, slowly pouring in the milk, while constantly stirring it.
Turn on the oven, to 180°C, grease individual moulds with caramel, or just use a large one (as you prefer), and bake in a bain-marie for 45 minutes. Remove from the oven at the end, check if it’s cooked and let it cool completely to unmould it.

To finish off the day, how about a pizza for dinner?
Nélson Ribeiro (@cookiing._) shares with us a recipe for a fluffy pizza, which can include each person’s favourite ingredients.
Start by putting 500ml of water in a bowl. In another bowl, mix together 11g baker’s yeast powder, 2 teaspoons salt and a tablespoon of honey. Then add 800g of flour. Mix well and add the water you’ve previously prepared, while mixing it again. Add a tablespoon of olive oil and knead for 5 minutes on a floured surface.
Divide it into 4 balls, each weighing about 300g (you can use a kitchen scale for greater precision).
Place the balls into greased bowls, with another tablespoon of olive oil, and cover it with vegetal paper. Put them in the fridge for an hour, then remove them, stretch the dough with your hands and roll them out on baking paper.
For the filling, spread over the pastry 3 spoons of tomato pulp with basil, 150g grated cheese, slices of 1 red onion, and, finally, 200g mushrooms and 150g of red pepper strips. Place everything in the oven for about 15-20 minutes, remove and serve hot with some rocket leaves.
